       In this cooking method, the most important factors are pressure and temperature. Makfry frying machines are designed to cook at 165 degree temperature and 6-8 PSI pressure. If the cooking is going to be lower than 165 degree, the chickens will not be crispy covered and if the cookingis going to be higher than 165 degreee, then the chickens will be burned. In other saying, when the temperature is low, there will not occur any pressure and the products will be dry. When the temperature is high, there will be risk about being destroyed of the products. 

       Pressure derives from the natural juice of the cooking product. A part of the juice of the product which are put in hot oil, evaporates and provides to occur pressure in the tank. Rotary relief valve with regulated weightiness keep the necessary pressure and throw out the excessive pressure. 

       The juice inside of the product does not go outside thanks to the pressure which occurs inside of the machine and the oil on outdoor space of the product does not get in the product.
